1 1/4 kg chicken breast (boneless and skinless)
500 g foiled
150 g butter
3 onions
1 large leek thread

1 large carrot
200 g sour cream

Method of preparation:

1. Choose 800 g of chicken breast fillets, which are seasoned with salt and pepper. The meat is fried for 4 minutes on each side, over medium heat, in 50 g of butter. Allow to cool.

2. In a pan, heat 50 g of butter. Onions and leeks are cleaned, washed and finely chopped. Add in hot butter. Cook for 3-4 minutes, over low heat, then add the mushrooms, drained from the canned juice and finely chopped, and the carrot, cleaned and put on a large grater. Cook for another 6 minutes, over low heat, stirring.

3. The rest of the chicken breast (which has not been fried) is finely chopped with a knife. Heat 50 g of butter and put the minced chicken. Cook for 4 minutes, then cool and add to the mushroom mixture. Put the beaten egg white and sour cream on top, then mix vigorously.

4. Spread the pie sheet. Cover with half the amount of prepared filling. Arrange the initially fried breast pieces in the middle, and spread the rest of the filling over them.

Preparation time:
20 minutes, plus baking time.

Wash the zucchini and put it on a coarse grater or cut it into small pieces. Combine milk with eggs and salt. Mix the ingredients well. Sift the flour, mixed with the baking powder and add it to the egg bowl.

Finely chop the greens and grate the cheese. Add the cheese and greens to the flour bowl.

Wash the chicken breast, dry it with paper towels and cut it into small pieces. Add the chicken breast to the previously prepared mixture. Add spices, salt and ground black pepper. Mix until all ingredients are combined.

Grease the baking dish with sunflower oil. Spread the mixture obtained, distributing it evenly throughout the tray. Put the tray with the pumpkin pie and chicken breast in the preheated oven at 200 degrees. Bake the pie for about 40 minutes, until golden brown.

Quesadilla is a dish formed in a tortilla, that stick of Mexican origin, which we fill with different ingredients. We can only use vegetables and cheese or we can add meat, fish or even seafood. I love quesadilla with chicken and bell pepper. The combination seems absolutely perfect to me. Of course you can add your favorite vegetables: tomatoes, corn, olives, hot peppers or any other.

You can make your own glues, if you want. You have my recipe for glue for shaorma which go great with this preparation. To shorten the time, you can easily buy commercial tortillas, either white flour or wholemeal tortilla. If necessary, you can also use Lebanese glues that are found everywhere. For cheese, I would use gouda, but any kind of cheese is good, even the smoked one, it is important that you like it.

Bake the chicken quesadilla in a non-stick pan, on a grill or even in a sandwich maker. If you make a barbecue in the yard, you can even bake them, but be very careful not to burn the tortilla, especially if the grill is very hot. If necessary, you can put them in the oven, but for the crispy crust, I recommend baking them either in a pan, on the grill or in a panini maker.

Serve the quesadilla with hot chicken, the cheese must remain melted to enjoy its taste. I go very well with a salad of tomatoes, cucumbers, onions and parsley. During the holidays, I went to my parents' house and I learned a special recipe from my mother, a different kind of salad. Usually, on holidays, Romanians don't miss the classic beef salad on the table, but we said to try something else and we really liked it. It's a very simple recipe, but as simple as it is good. I apologize for the quality of the pictures. In reality it looks much better.

Ingredients chicken breast salad with leek & # 8211 large portion, about 7 people:

  • a whole chicken breast (about 700 g)
  • 2 leeks
  • a large box of corn (still about 700 g)
  • 200 g cream 25% fat or a Cremosso yogurt
  • 150 g of mayonnaise & # 8211 you can buy it ready-made, or you make it & # 8211 the recipe is here
  • 2 boiled eggs (3 appear in the picture because I used an egg for mayonnaise, as well as a teaspoon of mustard)
  • salt and pepper to taste

Boil the chicken breast, leave it to cool and then cut into strips or cubes & # 8211 will not come out perfectly cut, because the chicken breast will break. Wash the leeks well, cut the ends and then cut each piece in half lengthwise. At leeks it must be checked that there is no sand between the leaves. Then chop and rub with salt to soften.

Fry the chicken breast a little in the pan with oil.

Then make the mayonnaise and mix all the ingredients. It can be decorated in various forms, here you can use your imagination & # 8211 from egg whites to parsley leaves etc.

Dough: dissolve the yeast in 4-5 tablespoons of warm water. Sift the flour into a bowl and put warm water, egg, salt powder, dissolved yeast and oil. Knead until you get an elastic dough. Let it rise until we prepare the filling.

Stuffing: wash the chicken breast and cut it into three pieces. Heat a grill pan well and fry the pieces of meat for 2-3 minutes on each side. When they cool, cut them into cubes. We clean the onion, wash it, cut it into scales and heat it in the four tablespoons of oil. Cut the pepper into cubes and finely chop the parsley. In a bowl put all the ingredients, season with paprika, salt and pepper and mix.

Put the dough on baking paper and spread it with the rolling pin in a rectangular sheet (20x30 cm). Straighten the edges with a roll (knife) and put the filling in the middle along the length.

Cut the edges obliquely into strips of about 2 cm and cover the filling alternating strips of dough.

Transfer the pie with the baking paper to a tray and grease it with beaten egg. Put the pan in the preheated oven over medium heat for 40-45 minutes, until nicely browned. It can be served both hot and cold.
