  1. Mix the double cream with the cream cheese. Add the lemon juice and chopped herbs.
  2. Spread the mixture on a crepe then add a slice of smoked salmon. Roll up the crepe, then slice into quarters with a sharp knife. (You can use cocktail sticks to secure the rolls if you need to).

Spinach and smoked salmon crepes + lemon garlic cream sauce

In Russia, the arrival of spring and the days leading up to Lent are celebrated with a weeklong festival called maslenitsa (масленица). The holiday is marked by eating mountains of crepes or blini (блины), both sweet and savory, which are said to symbolize the sun and bring warmth. We spent last year celebrating with friends and enjoying a make-your-own crepe bar and, although it’ll just be the two of us this year, we’re starting the festivities a few weeks early with these spinach and smoked salmon crepes!

Making crepes

If you’ve never made crepes before, it’s actually easier than you might think! Here are a few tips to help you get perfect crepes from your first batch:

  • Always make sure your pan is hot before adding the batter — it should be close to the smoking point of butter.
  • Use the first crepe to test the temperature and batter. Adjust accordingly.
  • Crepes cook fast, especially after they are flipped. They only take about a minute and a half on one side and 30-40 seconds on the other. If your crepes are cooking slower than this, you may be adding too much batter to the pan (you only need 3-4 tablespoons) or your pan may not be hot enough.

Smoked salmon and spinach filling

While Viktor tends to prefer sweet fillings for his crepes, I almost always crave something savory. We often compromise by eating a few of the first crepes with a bit of jam and then serving a savory brunch with the remaining stack. And then of course maybe a few leftover crepes with berries and homemade whipped cream for dessert!

One of our favorite options (and one of the easiest!) for a savory crepe is simply baby spinach and sliced smoked salmon. For the spinach portion, saute the fresh spinach with a bit of olive oil and garlic until wilted and tender. Then just slice your smoked salmon and layer it onto the crepes along with the spinach. And that’s really all there is to it!

If you’re cooking for a crowd, you might want to make your crepes and fillings ahead of time. To serve them warm, I would recommend assembling the crepes right before eating and then reheating them briefly in a dry skillet. This option is especially wonderful if you want to add something like cheese, which is best when slightly melty and gooey!

And while these crepes are definitely hearty enough to serve alone, I would be remiss if I didn’t suggest adding a fried egg with a runny yolk to round out the dish!

Lemon garlic cream sauce

Because our crepe filling was so simple, we wanted to add a little something extra to really bring the dish together. And what better way to greet spring than with a bright and lemony garlic sauce! It’s an optional addition, but it only takes about 10 minutes to whip up and I highly recommend it if you have the ingredients on hand.

To make the cream sauce, first melt a bit of butter in a small saucepan. Add a few cloves of minced garlic and then stir in a tablespoon of flour to help thicken the sauce. Make sure to fully incorporate the flour into the butter and stir for several minutes before moving onto the next step — this will make sure you can’t taste the flour in the final sauce. Then pour in the heavy cream, bring to a simmer and cook until the sauce thickens. Finish the sauce by adding a bit of lemon juice and zest along with a pinch of fresh thyme. Other than garlic, these are the main flavorings of the sauce so feel free to add more or less to taste!

Finally, drizzle your lemon garlic cream sauce over the finished crepes, garnish with extra fresh thyme and enjoy!


What is wild garlic?

Allium ursinum (Latin for bear&rsquos garlic) is native to Europe and Asia. It is widespread across Europe, and also known throughout North America, in the Eastern half of the United States and on the West coast.

It has a very short season in spring, which is now, in April and until June, depending on where in Europe you are. Right now, the German woods are full of it, I could pick tons of it. You can usually buy it at the farmer&rsquos market and many supermarkets sell it as well.

One of the best parts about crepes is how each person can customize their own. Since it is all about the fillings, you can cater to all sorts of dietary preferences. Just lay out a variety of fillings and everyone can dress up their crepes to their own desires.

The crepes themselves can be made from all kinds of flours. I like using partially whole wheat or even oat flour since they are rich in nutrients, but you’ll find lot of ideas from these other recipes. And once you have your base, it’s time to get creative.

It’s especially amazing to incorporate fresh, seasonal produce into your crepes. Whether you are going for a sweet spread with lots of fresh fruit, or more savory choices with cheese and vegetables, pick up some of whatever is available at the farmer’s market.

This is a very tasty salmon crepes recipe that goes together quickly if you make the "pancakes" ahead of time. Serve it with a green salad and a baguette for a complete and satisfying dinner. Smaller crepes would also make a nice French entree for a more elaborate meal.

I like this recipe because the sauce and the fish cook at the same time. Crepes are already a bit fussy in my book, so it's nice to have the rest of the recipe go together quickly.

These salmon crepes can be made in stages. You can make all the crepe pancakes a day in advance and store them in the refrigerator wrapped in plastic. You could also assemble the crepes and keep them in the refrigerator, then heat them in the oven to serve - heating time will be a bit longer.

These sophisticated crêpes require some assembly but have a lovely presentation. Slowly cooking the eggs over low heat just until set ensures that they stay nice and creamy even after baking. Serve with a dollop of crème fraîche or sour cream.

  • 1/2 cup milk
  • 1 pinch pepper
  • 1 tablespoon butter
  • 1 pkg (150 g) garlic-and-fine-herbs fresh soft cheese (such as Boursin)
  • 7 oz smoked salmon cut in strips
Crepes:
  • 1 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 1/2 cup milk
  • 3 tablespoons butter melted
  • 1/4 cup finely chopped fresh chives

Method

Crêpes: In bowl, whisk flour with salt. Whisk together eggs, milk and 2 tbsp of the butter whisk into dry ingredients until smooth. Strain into bowl cover and refrigerate for 1 hour or for up to 24 hours. Stir in chives.

Heat 8-inch (20 cm) crêpe pan over medium heat brush with some of the remaining butter. Pour scant 1/4 cup of the batter into pan, swirling to coat cook, turning once, until golden, about 1 minute. Layer between waxed paper. Repeat with remaining batter. (Make-ahead: Wrap in plastic wrap refrigerate for up to 24 hours.)

Whisk together eggs, milk and pepper. In large skillet, melt butter over medium-low heat cook egg mixture, stirring, just until softly set but still slightly runny, about 20 minutes. Remove from heat. Stir in cheese.

Place strips of salmon over centre of 1 crêpe spoon scant 1/4 cup egg mixture over top. Fold in sides of cr?pe and roll up. Place, seam side down, in greased 13- x 9-inch (3 L)
baking dish. Repeat with remaining crêpes. Cover with foil. (Make-ahead: Refrigerate for up to 24 hours.)

Bake in 350°F (180°C) oven until heated through, 15 to 20 minutes.


Preparation

  1. Make crespelle:
    1. Blend together eggs, water, flour, and salt in a blender until smooth. Transfer to a bowl and stir in tarragon.
    2. Lightly brush a 10-inch nonstick skillet with melted butter and heat over moderate heat until hot but not smoking. Ladle about 1/4 cup batter into skillet, tilting and rotating skillet to coat bottom, then pour excess batter back into bowl. (If batter sets before skillet is coated, reduce heat slightly for next crespella.) Cook until just set and underside is lightly browned, about 30 seconds, then invert crespella onto a clean kitchen towel in one layer to cool. (It will be cooked on one side only.) Make 5 more crespelle with remaining batter in same manner, brushing skillet with butter as needed and transferring to towel as cooked, arranging them in one layer.
    1. Heat butter in a 1- to 2-quart heavy saucepan over moderately low heat until foam subsides. Add flour and cook, whisking, 2 minutes. Add clam juice and water in a slow stream, whisking, then bring to a boil, whisking. Reduce heat and simmer, whisking occasionally, 5 minutes. Stir in cream, zest, and pepper, then remove from heat.
    1. Put oven rack in middle position and preheat oven to 425°F. Butter a 13- by 9-inch or other 3-quart glass or ceramic baking dish and spread half of sauce in dish.
    2. Stir together butter (2 tablespoons), shallot, salt, and pepper and spread 1 teaspoon on top of each fillet.
    3. Put 1 crespella, pale side down, on a work surface, then place 1 salmon fillet, buttered side down, in center of crespella and fold crespella around salmon, leaving ends open. Transfer to baking dish, arranging, seam side down, in sauce. Make 5 more cannelloni with remaining salmon and crespelle in same manner, arranging in baking dish. Spoon remaining sauce over cannelloni.
    4. Bake until salmon is just cooked through and sauce is bubbling, 15 to 20 minutes.

    Flatbreads for Smoked Salmon Roll Ups

    Here is a variation on the recipe above from S. J. Hutchins of London, Ontario

    I often make Smoked Salmon Roll-ups for parties.

    Make sure you always use the plain, white Flat Breads. The ones that are flavoured with Sundried Tomato or Green Spinach Flat breads look so pretty, but when you try to roll them up into pinwheels………..they will crumble and fall apart. For some reason, the added flavouring makes them dry. But the White flour Flat Breads always roll and slice much better.

    Put them in a Tupperware container with a damp, paper towel over them and refrigerate for at least 5 hours, and they will slice much better. Use a serrated knife………give it a try!

    I have a very important message to deliver: Happy Friday! Although my weeks apparently are not extremely hectic, I always look forward to Fridays. After all, who does not?

    I will keep it short and simple today as I know we don’t want to spend a lot of our time on weekends reading a boring (and long) blog post. Besides, who needs to talk when we have these Ground Beef Stuffed Crêpes? I certainly don’t!

    You might (but most likely not) remember that I am a huge fan of crêpes. I do equally like both sweet and savory…but I probably like savory ones just slightly more. Well, I cannot reject crêpes served with either condensed milk or dulce de leche.

    So far I have had some other similar ideas on the blog including these Butternut Squash Chicken Buckwheat Crêpes and Mushroom Ham Cheddar Buckwheat Crepes. There’s one little secret. I am going to make another savory version tomorrow. Will you promise to keep my secret safe?

    You can whip this dish relatively quickly as you can make the crêpes while preparing the beef filling (Please note that the recommended amount of batter will result in having more crêpes you need for this skillet. However, I believe you will handle this problem professionally. I did. With a can of condensed milk). The final step is baking the crêpes in the oven until the edges are crisp and the cheese has melted. And here we go – a hearty and delicious lunch or dinner is waiting for you.

    Just don’t forget to grab a glass of wine. That’s strongly recommended.
