It's no secret that we love a good craft beer around here, but let's face it: we're not always pros at how to pair our favorite beers with our favorite foods. Sure, we've learned that beer can work with cheese, chocolate, even our favorite brunch foods (thank you baby Jesus), but we're at times still stuck on what to eat. Fortunately, Craftbeer.com and the Brewer's Association have broken down what those tricky beer terms mean when it comes to pairing food and beer.

As Julia Herz from Craftbeer.com explains, there are four main components of the overall experience of a beer: taste, flavors, intensity, and sensations. When pairing craft beer with food, it's best to think about how the craft beer's taste elements either counteract or contrast with the food's taste; the ultimate craft beer and food pairing allows both to equally shine.

As we can see from these "potential interactions" between taste characteristics from beer (on the lefthand side) with the taste characteristics from food (on the righthand side), we can see that not everything is a "home run." After all, some of those super bitter, hoppy beers might just make your super spicy pad Thai a kick in the rear. But it's good to know that some beers with sweet characteristics can counter a spicy meal, while our sweet Porters are best served with a melt-in-your mouth cake. Complement: When one item from a craft beer or food complements the other during the pairing.

Counter/ Contrast: When elements interact and either heighten or calm each other's intensities.

Cut: The bitterness of hops cut and lessen the richness of fat, richness, and oil in food.

How Homebrewing Impacted Modern American Beer

“I’ve interviewed over a hundred craft brewers in America. I can count on one hand how many of their stories don’t start with, ‘So, one time, I got a gift of a homebrewing kit. Next thing I knew, I was hooked’,” says Drew Beechum, who co-hosts the podcast, Experimental Brewing.

Homebrewing is widespread and wildly popular in the U.S. today. But, for many years, it was illegal.

During Prohibition (1919-1933), commercial acts of brewing, distilling and winemaking were banned. However, when the 18th Amendment was repealed in 1933, winemaking for at-home use was permitted. But the law did not include homebrewing, leaving it in a governmental oversight limbo.

It wasn’t until 1978 that President Jimmy Carter signed bill H.R. 1337, which contained an amendment that created an exemption from taxation of beer brewed at home for personal or family use. It went into effect on February 1, 1979. At last, homebrewing was legal.

Many believe this was a largely symbolic development. Scores of homebrewers, both committed and casual, had made their own ales for years. They’d just done so quietly. Still, the bill into law brought the hobby into the general consciousness, and it helped spur on the beer industry as we know it today.

Before Prohibition, there were more than 4,000 breweries in the United States. Brewing, along with whiskey, wine and cider production, was decimated when the 18th Amendment was enacted in 1919.

Homebrewing suffered a similar fate. The landscape was dramatically changed by the time Prohibition was repealed by the 21st Amendment in 1933. It took decades to regain momentum.

By the 1970s, only a handful of breweries were open, and most produced relatively bland American lagers. Imports were available and offered a little more oomph of taste or specialty ingredients. But for something truly special or flavorful, America’s homebrewers had to do it themselves.

“Speaking to the older brewers I know, they picked homebrewing defensively,” says Beechum, who with Denny Conn is the co-author of Experimental Homebrewing and HomeBrew All-Stars. “Many had been overseas and tried those odd European beers and craved them when they came back home.

“Since back home was bereft of beers that saw taste as a good thing, and not a thing to be ruthlessly scrubbed in the name of approachability, what else could they do?”

The federal legalization of homebrewing was followed by similar adoption by most states. Alabama and Mississippi were two longstanding holdouts. The states didn’t legalize homebrewing until 2013. A proliferation of homebrewing supply shops opened around the country, along with better access to ingredients and agricultural advancements that benefited beer.

Newsletters and magazines were created that focused on homebrewing recipes and practical tips. Around the country, clubs dedicated to homebrewing popped up, many still in existence today.

The American Homebrewers Association (AHA) was founded in 1978, now part of the Brewers Association, a national group that holds regular conferences and competitions.

The AHA also raises awareness for the hobby.

“Brewing beer does not need to be intimidating, and the hobby can be as simple or as complex as you want it to be for yourself,” says Brad Ring, publisher of Brew Your Own Magazine, which just celebrated its 25th anniversary. “Some homebrewers really enjoy the science behind making beer, while others are happy to just follow a recipe.

“There is no wrong way to approach this hobby, making it attractive to anyone who enjoys beer and wants to really learn more about it by looking under the hood and making it themselves.”

Even with more than 8,000 breweries operating in the U.S., homebrewing remains popular. The AHA estimates that there are more than 1.1 million active homebrewers in the country.

Since the novel coronavirus has upended life, Beechum says he’s seen an uptick in first-time homebrewers as well as what he calls “the lapsed zymurgist [a person who studies or practices fermentation]” coming back to the hobby.

“For folks new to brewing, they’re incorporating it into a world of fermentation,” he says. “We’re seeing sourdoughs and krauts and meads and beers all lumped together in a ‘fermentationist’ approach. Fermentation is a vital human skill, and we need more practice.”

Ring says that homebrewing has become easier over the last 25 years, thanks to better access to ingredients and information.

“When I started in 1991, you often had to make your own brewing equipment, and the selection of beer ingredients was very limited and often not that fresh,” he says. “There has never been a better time to start homebrewing.

So much of the success of today’s professional brewers were built on the foundation of homebrewing. Some experiments done in garages, driveways and backyard sheds eventually make their way to pro systems and wind up at local taprooms.

“Trying to extricate homebrewing from the rise of craft brewing is a fool’s errand and would give you a poor understanding of beer history,” says Beechum.


Everything You Need To Know About Craft Beer

With craft beer's meteoric rise in popularity in recent years, chances are you're going to come across the product of a microbrewery at some point. However, many of us are stuck wondering the same thing: What goes with craft beer? Part of the appeal of small-batch brews lies in their diversity smaller, local breweries are known to experiment more than the big names. Unfortunately, with thousands of microbreweries operating in the United States today, the range of choices that make craft beers so popular can make it difficult to figure out what to pair with your drink.

Of course, it's absolutely possible to enjoy a pint without worrying about pairing it with the "right" food or serving it in the "right" glass. As long as you're enjoying yourself, you're free to drink beer however you want — it's practically written into the Constitution, or at least heavily implied. That being said, some beers just taste better with food, and there are all kinds of ways to enhance the experience.

First of all, it's important to know what you're drinking. Beer is divided into four types: Ales, lagers, stouts and porters, and malts. These categories can be further broken down into styles such as light, dark, amber, India pale ale, and many more. Much like wine, the kind of beer influences how you serve it for instance, pale lagers are often served relatively cold, in a Pilsner glass. In contrast, ales are generally served in mugs at a warmer temperature.

Once you've gotten an idea of how to serve a beer, you get to the fun part, aka pairing it with food. According to Fix.com, there are four things to keep in mind when figuring out what to serve with a beer: Intensity, taste, mouthfeel, and flavor. First of all, try to keep to the same intensity of flavor when picking out a menu heavier stouts go better with a hamburger than a salad, and so on. The same goes for flavor (which isn't the same thing as taste, by the way) — try to pair beers with the foods they evoke.

Taste and mouthfeel are a little more complicated. Try to use beer as a way to balance the taste of dishes, like pairing a bitter stout with something a little more sweet. Similarly, it's suggested to contrast mouthfeels between beer and food for instance, pair a sour beer with something heavy.

Now that you've gotten your crash course in beer-pairing, go forth and try it out! Just remember that these are guidelines if you like IPAs with your dark chocolate or caramel-flavored beer with spaghetti, that's totally up to you.


The Beer Float Guide That Will Transform Your Summer Drinking

Cold beer and colder ice cream: these are the essentials that get us through each summer. And when the two join forces, the refreshingly delicious possibilities are endless.

Certified cicerone Marcus TenHarmsel has curated several ice cream and beer pairings at Austin’s Hopfields.

“If you consider the basic principles for beer pairings- match strength with strength, find harmonies, and consider contrasting elements- ice cream can offer loads of fun pairings,” he explains, 𠇎specially to the adventurous soul who is willing to make mistakes and try unusual things.”

Most recently, Hopfields collaborated with Lick Honest Ice Creams, a homegrown Austin company committed to using seasonal and local ingredients, including high quality cream sourced from a nearby family-run farm.

“We love making (beer floats) because it gives us an opportunity to highlight the subtle flavor characteristics that exist in our ice creams,” says chef/owner Anthony Sobotik. “The complexity of flavor you get with many brews is something you can&apost typically find in a craft soda.”

“There are endless opportunities when you have ice cream flavors involving spices, herbs, vegetables, fresh berries and citrus, because many beer styles share such similar flavors coming from the hops, yeast, and adjuncts used to brew them,” explains TenHarmsel. “This is when things get really fun and exciting for me.”

When creating beer floats, Sobotik recommends being mindful of sugar and fat content of your components. “If you want a light, refreshing float, you&aposll want an ice cream that&aposs not high in sugar or fat,” he says. 𠇊 heavy ice cream with a high butterfat level is not going to be refreshing and it would compete with a lighter beer�versely, if you want a heavier, creamier result, select a higher fat ice cream and pair it with a creamier, heavier beer that can handle the ice cream, such as a porter or stout.”

Stouts and Porters

𠇋ig chocolate or coffee stouts work wonderfully with complimentary ice cream flavors like vanilla, coconut, or toffee, and create an even better sensory experience when put together,” says TenHarmsel. Some of his picks include Odell Lugene Chocolate Milk Stout, 512 Pecan Porter, Southern Tier Pumking, and Samuel Smith’s Organic Chocolate Stout. Sobotik prefers using a Schwarzbier like the Black Thunder from Austin Beerworks. “It&aposs often times lighter bodied than a stout or porter but with the same depth of flavor,” he says, finding it pairs well with ice cream flavors like their dark chocolate with olive oil and sea salt.

Hefeweizens and Kristalweizens

“The vibrancy and freshness of citrus or berry flavors pair perfectly with brews like Hefeweizen,” says Sobotik. Try combing a Hef with a scoop of strawberry ice cream and a Belgian style wit with goat cheese, thyme, and honey ice cream.

Lambics, Wild Ales and Berliner Weisse

“Sour beers can be great too,” says Sobotik. “Our kitchen manager loves them in floats and thinks they&aposre the most interesting as tart and creamy flavors work so well together.” TenHamsel’s favorite sour float was made with Louis Gueuze Fond Tradition lambic-style beer paired with lemon and lavender ice cream. Try scooping simple vanilla bean ice cream into Saint Arnold Brewery’s Boiler Room Berliner Weisse, wild ales like Jester King Brewery’s Atrial Rubicite and Goose Island’s Halia or any of the fruit lambics produced by New Glarus Brewing or Lindemans.

Pale Ales and IPAs

“Hoppy beers often have fruit forward flavors,” says TenHarmsel, “so a tangy sorbet, or a juicy peach ice cream can be a refreshing treat.” He cites another favorite pairing: uber-hoppy and fruity Cedar Creek Dankosaurus IPA with dewberry corn cobbler Ice cream (a Lick flavor made from juicy dewberries with pops of fresh corn kernels.) Piney IPAs with a crisp citrus finish, like Lagunitas Little Sumpin’ Sumpin’ Ale or 3 Floyds’ Zombie Dust Pale Ale, could be elevated with a scoop of a citrus sorbet or sherbet.

Nitro Beer

The best floats, both Sobotik and TenHarmsel agree, occur with beer poured from a nitro tap (a method whereby nitrogen is added to the brew). “The lack of CO2 in nitro beers produces bubbles both smaller in size and quantity, which enables the cream to hold up better in the float because of nucleation,” explains Sobotik. “Nitro beers also embody an overall creaminess that produces a more desirable mouth feel when crafting a beer float.” You can’t go wrong, promises TenHarmsel, with a simple Guinness and chocolate ice cream float. As for something a little more complex, he’ll never forget the time he paired Left Hand Milk Stout (available in nitro bottles) with strawberry basil ice cream from Lick.

�r is such a great match for ice cream floats because of the endless diversity of flavor it has to offer,” TenHarmsel says. And with more and more craft breweries and artisan ice cream shops than ever before, there are enough exciting combinations to keep us afloat all summer long.


After your boil, you will need to cool your wort in a hurry, also called shocking it. This takes place before you can add the yeast. You’ll want to do this as quickly and cleanly as possible to avoid any unwanted spoilage or contamination.

As your wort is coming to a boil, prep an ice water bath in your sink. Once removed from heat, submerge your pot in the water, without letting any get inside, to help the wort to cool rapidly. Once your wort reaches the appropriate temperature as specified by your recipe or yeast being used, transfer it to a fermentation bucket. Stir vigorously with a sanitized whisk or other utensil to aerate, then pitch (add in) the yeast and stir the mixture up again.

The One and Only OLD BAY Beer from Flying Dog Brewery is Back for Summer 2021

The one and only OLD BAY® beer in existence, Dead Rise OLD BAY Gose created by Maryland's Flying Dog Brewery, is back for its 2021 season. This limited release hits store shelves starting mid-May in its new 12oz can packaging.

Perfect for summer days full of seafood, Dead Rise's gose formula blends the Chesapeake's most iconic seasoning - OLD BAY - with a refreshing lemony tartness for a beer low in bitterness and high in flavor.

To achieve the beer's delicate tartness, Flying Dog's brewers added lemon and salt to the recipe, which also calls for 50% more OLD BAY then Dead Rise's previous formula (a blonde ale). Brewed with Citra hops, Dead Rise carries a 5.7% ABV and 25 IBUs.

"The gose recipe we debuted in 2020 is back and wrapped in awesome packaging that even more closely resembles a can of OLD BAY," said James Maravetz, VP of Marketing at Flying Dog. "This must-try beer features the zesty, unique flavor of this beloved staple – OLD BAY – with a refreshing pop of lemon and salt that makes Dead Rise the perfect companion for summer days full of seafood."

Flying Dog and OLD BAY's pairing began six years ago when a Flying Dog employee pitched the innovative idea of the beer and seasoning collab at the brewery's annual Brewhouse Rarities event. Born in the heart of crab country, and once called ‘the most Maryland beer ever' by The Washington Post, Dead Rise pays homage to the history of Maryland's Chesapeake Bay and summer crab culture while also supporting the local industry.

"We're excited to continue the partnership with Flying Dog this summer. Our loyal fans love OLD BAY with everything summer – steamed crabs, crab cakes, corn-on-the-cob, shrimp, dips – and the Dead Rise OLD BAY Gose. It's infused with that distinctive OLD BAY blend of herbs and spices that makes the season so flavorful," said Jill Pratt, Chief Marketing Excellence Officer at McCormick.

A portion of the proceeds from Dead Rise sales are donated to the Maryland Department of Natural Resources' True Blue Program, an annual campaign that highlights and rewards those restaurants who make it a point to serve local, Maryland harvested crab. The name Dead Rise is also a nod to the traditional fishing boats used year-round by Chesapeake Bay watermen to gather the shellfish.
